Mixed Mushroom Soup

with Chives, Smoked Walnut Oil Drizzle, Walnuts, Shitake Dust

Serves 4

Ingredients

2 x Onion peeled and roughly chopped.
2 x Garlic cloves crushed
2 x Celery sticks sliced
1/4 Leek sliced
450g Mixed Mushrooms roughly sliced
50g Shitake extra, thinly sliced and dried (dehydrated)
1.0 litre Vegetable Stock 
250ml  Vegan Double Cream
3g Sea Salt
1 x pinch White Pepper
10g Fresh chives finely sliced
30ml Smoked Rapeseed Oil
10ml Olive Oil
10g Roasted Walnuts crushed
 

Method

  • In warm pan, sweat the onions in little olive oil
  • Add garlic, leeks, celery and sweat further till soft.
  • Add mushrooms and sweat further, caramelising slightly
  • Deglaze with little stock, then add rest stock, bring to boil.
  • Simmer for 30 mins reducing by a third
  • Then add cream, bring to boil, season to taste.
  • Decant into food processor and blend till smooth, pass through strainer if required.
  • Bring back to boil and serve into hot soups plates.
  • Garnish with chives and smoked walnut oil, serve.
