Induction is the most energy-efficient technology available to kitchen operators and an easy way to reduce a kitchen's carbon footprint. Automatic pan-sensing technology means that no energy is used and no heat is generated until a pan is placed on a zone. When a pan is placed on the zone, over 90% of the energy goes directly into the pan.
There is no need for expensive gas interlocking, helping to avoid additional installation costs.
Minimal heat emissions contribute to a cooler kitchen, helping staff remain more comfortable. Extraction does not have to work as hard, helping to save energy and money.
No more scrubbing at the end of service. The hob can simply be wiped clean and spills can even be dealt with as soon as they occur.
No visible flames mean less risk of burns. Handles on good-quality pots and pans remain safer to touch, reducing the need for additional cloths or gloves when moving or lifting them.
Immediately change the hob temperature as and when required, moving from a gentle simmer to a rolling boil in seconds and giving chefs the control they need.
A 5kW zone can boil 1 litre of room-temperature water in less than 90 seconds. Faster heat-up times can help reduce overall cooking times.
The table below shows the time taken in minutes to boil 1 litre of room-temperature water using the various power zones. It also demonstrates the difference that pot size can make.
Induction transfers energy directly into compatible cookware, providing rapid heating and precise control when chefs need it.
Choosing the correct induction equipment depends on the demands of your kitchen, how frequently the equipment will be used and the type of operation it needs to support.
Standard models are designed for busy and demanding professional kitchens requiring dependable all-day use. Light-duty models provide a suitable option for smaller operations with lower and less frequent usage demands.
An electrical current is produced by a generator, which creates a magnetic field. This magnetic field reacts with the pan base, if they are made of a ferromagnetic material such as cast iron or most types of stainless steel, to create heat.
To maximise the benefits of induction, it is important to use appropriate cookware:
- Made of a ferromagnetic material (ie. cast iron, most types of stainless steel)
- Has a magnetic base
- Flat bottomed (The more of the base touches the heat zone the more efficient it will be)
- Undamaged base (ie. base not warped or bashed)
From energy efficiency and rapid heat-up to precise control and a more comfortable kitchen environment, discover the benefits Falcon induction can bring to your kitchen.
