Precision cooking: Falcon launches Cook and Hold ovens at Host

Cook and Hold line up.jpgAt Host 2025, Falcon will unveil its new range of Cook and Hold ovens, combining exceptional energy efficiency with outstanding cooking performance. Increasingly popular for their ability to enhance yield, boost succulence and improve kitchen productivity, Cook and Hold ovens free up both staff and conventional ovens — allowing chefs to prepare in advance, hold food safely, and focus on other tasks during busy service periods.

At the heart of Falcon’s new models is a smart, intuitive controller that delivers precision, consistency and energy savings. Each oven chamber has its own dedicated 5” touchscreen controller, meaning that in twin-chamber models the operator is able to see what’s happening in both chambers at the same time and with both ovens being fully independent  if one goes down, the other will continue operating as normal.

The controller makes operation simple and visual. A zoomed display and colour-coded actions show at a glance what each oven is doing, even from across a busy kitchen. Up to 48 programmable recipes can be stored, plus a ‘favourites’ list for one-touch access. Once cooking is complete, the oven automatically switches to hold mode, even logging how long food has been kept hot if the pre-set time has elapsed.

The controller also drives the oven’s energy-saving system, optimising performance throughout the cook and hold cycle. Once the chamber reaches temperature, energy use drops by 30–40%, and detailed consumption data can be viewed by day, week or month. The optional Wi-Fi module enables remote monitoring and automatic HACCP data download via cloud or USB.

For ultimate cooking control, chefs can work by time, probe or Delta-T, using two temperature probes per chamber. The dynamic Delta-T mode ensures pinpoint accuracy, maximising yield and texture. Gentle, even heat provides consistent results, while a smart heat-recovery system minimises loss when the door is opened. If left open, an alert triggers and the elements depower to conserve energy.

As expected from Falcon, every detail is designed for practicality, durability and ease of service. The ovens feature removable drip trays, quickly replaceable elements that can be changed onsite to minimise downtime, enhanced door gaskets for optimum efficiency, and controllers positioned away from the steam path to prevent any steam-related issues. The steam  has no impact on the screen or touchscreen performance, such as ghost touches. The cooking chamber and castors are made from 316 stainless steel for maximum corrosion resistance and long service life.

Available in single-chamber (CH15-11) and twin-chamber (CH30-11) models, both accept 1/1 GN pans on the shelves and feature 15 shelf positions with three shelves supplied per chamber as standard. The twin model offers double capacity within the same footprint, with independent control for true operational flexibility.
