Granary bread

Enjoy as rolls or small loaves

Ingredients

300g Granary Flour
200g Strong Flour
15g Instant Yeast
15g Salt
10g Honey or Maple Syrup
100g Butter, Melted to Brown Butter
Approximately 350ml Water

Method

  • Melt butter in a pan, until brown specs and nutty aroma, and set aside to cool slightly
  • Dissolve the yeast in a little warm water
  • Mix flour, honey/syrup and yeast. Then add 2/3rds of the water, followed by the melted brown butter.
  • Bring to a dough, then add salt.
  • Check the consistency and add water as necessary.
  • Knead on a table for around 10 minutes.
  • Form the dough into a ball, put in a container, wrap with cling film and leave at room temperature for several hours.
  • Divide into rolls, around 30-50g each.
  • Place on tray and allow to rise for 30 minutes.
  • Dust with flour.
  • Bake in fan assisted oven for 20 minutes, or until golden.

 

Enjoy with a generous amount of butter!
