STICKY TOFFEE COFFEE PUDDING

VANILLA TOFFEE SAUCE

Pudding Ingredients
120g Softened butter
180g Soft brown sugar
4 x Eggs lightly beaten
240g Self raising flour
1 tsp Bicarbonate of Soda
240g Dates pitted and chopped
4 tsp Coffee instant granules
300ml Boiling water

Pudding Method

  • Pre-heat fan assisted oven to 150°C
  • Cream butter and sugar till fluffy
  • Add beaten eggs little by little
  • Dissolve coffee with dates and hot water
  • Sieve flour and bicarb together, slowly add to butter, sugar and egg mix
  • When cooled, add the dates mixture to the batter.
  • Pour into a non-stick baking tin or lined ceramic oven dish, or individual moulds.
  • For large tray, bake for 60 – 90 minutes, for individual mould, bake for 15 – 20 minutes, cook longer if needed. 

 

Vanilla Toffee Sauce Ingredients

100g Caster sugar
2 tsp Water
75g Salted butter
1 x Vanilla pod, split and seeded
400ml Double cream

Vanilla Toffee Sauce Method

  • Melt sugar with the water over medium heat.
  • When syrup starts to form, turn up slightly till the syrup turns just golden
  • Turn off heat and keep syrup moving till deep golden, about a minute 
  • Add vanilla and butter and combine
  • Then add cream and whisk in.
  • Pour over cooked puddings when both are still warm
  • Serve at once.
