The "Famous Paddy" Burger

Celebrating St Patrick's Day with a delicious burger

Ingredients for 1 

160g       Scotch Beef Steak Mince
1/2         Shallot 
1/2         Garlic Clove
1x tsp    Wild Garlic
Pinch     Sea Salt
Pinch     Black Pepper coarse
1x           Sesame Seed Bun
1x tbs    Cocktail Sauce 
1x tsp    BBQ Sauce 
1x tsp    Red Onion Chutney
Pinch     Mix Crispy Lettuce
2x           Pickled Cucumber
2x           Streaky Smoked Bacon rashers 
1x           Brie Cheese slice
1x           Brown Onion
1x cup   Self Raising Flour
1x tbs    Cornflour
Touch    Green food colouring or
15g         Wild Garlic Puree
75g         French Fries cut

 

Method

Burger >

  • Finely dice the shallot and garlic, mix with sliced wild garlic and mince
  • Season and form into patty
  • Seal both sides in a hot skillet or pan, then add bacon and turn down heat till cooked.
  • Check core temperature is at least 75'C or above.

 

Chips >

  • Handcut Maris Piper potatoes into French fries cut
  • Wash, dry and blanch for 2 minutes at 180'C in fryer
  • Drain and then fry for a further 2 minutes till crispy
  • Drain on a paper towel, season and serve

 

Serving and Plating >

  • Toast the roll.
  • Add brie cheese to burger and place under warm grill till melted.
  • Build the burger by adding cocktail sauce on bottom and chutney on top slice of roll
  • First lettuce, then burger, bacon, cheese and pickle.
