St. Dwynwen’s Day – Welsh Valentines Day 2022

Warm Dark Chocolate Fondant, Sea Salt, Red Berries, Vanilla Rich Ice Cream

Serves 2

Ingredients

Fondants

300g 70% Dark Chocolate
250g Butter
2g Sea Salt Flakes
4 x Whole Eggs
5 x Egg yolks
250g Sugar
130g Plain flour sifted

Ice Cream

500ml Milk Full Fat
500ml Double Cream
2 x Vanilla Pods
8 x Egg yolks
150g Caster Sugar

Coulis

250g Mixed red berries
120g Caster sugar
3 x Pink pepper corns

Method 

Fondants

  • Melt Chocolate, butter and sea salt over a low heat water bath
  • Combine whole eggs and yolks, add sugar and whisk till light and fluffy
  • Add little by little sieved flour and fold together
  • Pipe into lightly greased moulds, ¾ to the top and bake at 180° for 8 – 10 minutes, depending on the size mould or ring used.

 

Ice Cream

  • In saucepan over low heat, bring milk, cream and vanilla seeds and pods to simmering point. 
  • At this stage, lightly whisk together sugar and egg yolk.
  • Add a ¼ of the warm milk cream mix to the eggs and combine, then add the rest. 
  • Return to the saucepan, and over low to medium heat, cook for a further 45 seconds.
  • Immediately take off heat and pass through a fine sieve into a bowl over ice water. Chill
  • When cold, place into ice cream machine and churn till ready. 

 

Coulis

  • Add berries and sugar to saucepan. 
  • Over low heat and under a paper lid, melt berries and sugar till liquid.
  • Turn up heat and reduce till syrupy consistency, chill. 

 

Cook, Plate up and serve. Happy St. Dwynwen’s Day Wales!!!

 

Chef’s Tips

  • Let chocolate fondant rest for 30 seconds in rings or mould before carefully unmoulding. 
  • To achieve a runny centre, always try one prior, to adjust timings just right. 
  • Milk chocolate can also be used in this recipe, and combined with other ingredients, makes for interesting culinary adventures. 

 

Best served hot and as soon as out of the oven.
