Spiced Hot Pumpkin Soup “Bowlaccino”    

Pumpkin soup laced with spices and frothy cardamom milk

Ingredients

1x Onion roughly diced
20g Ginger freshly grated
1x Garlic clove    finely mashed
½ Green chilli    finely chopped
1x Carrot roughly sliced
750g Pumpkin peeled and roughly cut
150g Butternut peeled and roughly cut
30ml Peanut oil
30g Unsalted butter
1x Bay leaf
1g Ground coriander
1g Ground nutmeg
3g Madras curry powder medium
2g Sea salt
2g Brown sugar
1g White pepper ground
800ml Vegetable stock 
100ml Cream
20g Mixed toasted nuts
4g Chives freshly sliced
100ml Milk full fat
2x Cardamom pods

Method

  • In large saucepan, with peanut oil and butter, sweat off onion, garlic, carrots and ginger till soft.
  • Then add pumpkin and butternut and all the spices, sugar, cover.
  • Cook over low heat for 5 minutes.
  • At the 5 minute stage, add the stock and seasoning, and bay leaf.
  • Bring to boil, turn down heat and simmer for 1 hour under lid.
  • Infuse the milk over very low heat with the cardamom pods. 

 

  • Remove from heat and blend in food processor with cream till smooth, pass through fine sieve. 
  • To serve, ensure soup is piping hot, then pour into warmed bowls.
  • Using a hand blender, or Espresso machine frothing nozzle, froth milk and spoon over the soup 
  • Sprinkle with chives and nuts.
