Delicious and healthy vegan sandwich

Serves 1

Equipment Focus

This recipe utilised the Lainox Naboo Boosted combination oven. Cooking made easy with boosted.

Ingredients

1 x Vegan Granary Roll

Sandwich filling:
30g mixed mushrooms sliced
½ red onion sliced
Small tomato sliced
¼ green pepper sliced
1 clove garlic sliced
1 tip mild red chilli
½ pickled artichoke
1 tbsp Mara seaweed
Good pinch of Droitwich sea salt
A few twists of rainbow pepper
10ml Filippo Berio Extra Virgin Olive Oil

Salad:
10g Cucumber roughly sliced
4 Black Olives sliced
Half a Spring Onion sliced
½ Small Green Tomato
Small handful of baby shoots
Any vegan salad dressing of your choice

Method

  • Line an oven tray with baking parchment
  • Place all sandwich fillings on the tray and sprinkle with Mara Seaweed, Salt and Pepper
  • Drizzle with olive oil
  • Roast at 240°C for 5 minutes
  • While vegetables are roasting, prepare your salad by mixing all ingredients in a bowl
  • Slice the granary roll in half, no vegan butter or margarine necessary as we have the natural juices of the vegetables
  • Layer the fillings into the sandwich
  • Place salad on the side, serve and enjoy
